A Message From Our Chefs

Did you know that Sacramento is the caviar capital of the United States? Caviar is the essence of extravagance world over, but it is also within reach thanks to our very own community of exceptional farms and restaurants. As chefs we have been taught that European caviar is “the best”. However, within the past 5-7 years, there has been a shift in the Sacramento caviar scene - and Tsar Nicoulai has been at the forefront elevating this hyper-local product in our region.

They create an artisanal caviar- that in our opinion can deliver the flavor, texture and quality to rival anything you will find anywhere in the world! This is why we serve Tsar Nicoulai Golden Reserve Caviar exclusively at Allora. It has always been a dream to expand our connection with our regional goods, and to see firsthand where our food comes from. This is why we created our caviar reel series and designed this dinner event to share with you. We are excited to introduce you to Marai and Ali Bolourchi, owners and operators of Tsar Nicoulai Caviar, on June 17th.

Tsar Nicoulai’s commitment to our region, sustainability, water conservation, animal husbandry & aquaculture are all on display in stunning fashion at their fish farm in Wilton, CA. Now, as chefs and restaurateurs we are more committed than ever to support Tsar Nicoulai and to do what we can to bring out the best in their caviar through our creative and collaborative cuisine.
