This spring, we are thrilled to highlight stinging nettles and wild-foraged mushrooms from one of our favorite farm partners, Laughing Duck Farm—a trusted source of some of the finest organic produce and heritage breed animals in the region.
Nestled in the hills near Folsom Lake in Newcastle, California, Laughing Duck Farm is a family-owned operation dedicated to sustainable agriculture and education. The farm specializes in heritage and rare breed animals, including sheep, goats, rabbits, ducks, chickens, quail, and geese. They also cultivate bees, fruits, vegetables, and herbs, emphasizing sustainability and nutrition. Their dedication to quality, sustainability and responsible sourcing aligns with Allora’s philosophy of honoring both the old-world traditions and the rich agricultural heritage of Northern California.

Stinging Nettles: A Unique Spring Treasure
One of the first signs of spring at Allora is the arrival of stinging nettles—a vibrant green, wild-growing plant that is as delicate as it is bold in flavor. This nutrient-rich ingredient, packed with iron, vitamin C, and antioxidants, is a prized addition to our spring menu.
Featuring stinging nettles in our current Agnolotti dish, a handmade pasta stuffed with a mix of mortadella, stinging nettles, lemon and parmesan, served in a fragrant Parmigiano espuma, and finished with cipollini onions and english peas. The result? A dish that perfectly balances earthy, bright, and savory flavors, celebrating the essence of seasonal Italian cuisine.
Wild Foraged Mushrooms: The Essence of Umami
Each year, spring brings an incredible variety of wild mushrooms to our kitchen, and this season is no exception. While we are eagerly awaiting porcini mushrooms to make their debut, we are happily working with an exceptional selection of yellowfoot, black trumpet, and chanterelle mushrooms—all of which add depth, texture, and umami-rich complexity to our dishes.
These wild mushrooms are being highlighted in two of our current dishes:
🍽 Japanese A5 Wagyu with Local Wild Mushrooms – A5 Miyazaki Wagyu, the highest grade of Japanese Wagyu beef, served with a medley of wild foraged mushrooms, parisian gnocchi, salsa verde and creamed arugula. The combination of buttery, melt-in-your-mouth Wagyu and deeply savory mushrooms creates an unforgettable dish that is both decadent and refined.
🍽 Chicken Marsala with Wild Mushrooms – A classic with an Allora twist. Tender Mary’s organic chicken is pan-seared and served with farrotto, wild foraged mushrooms, cipollini onions and marsala jus. The sweet, nutty notes of marsala and the depth of wild mushrooms elevate this comforting Italian dish to something truly special.
As we eagerly anticipate the arrival of fresh porcini mushrooms, we are excited to continue crafting dishes that showcase the best of Sacramento’s seasonal bounty.
